Our latest release and something extra special. A rare, single-cultivar matcha, JAS-certified organic and sourced exclusively from Ujitawara, Kyoto; the historic birthplace of modern Japanese green tea.

Gently light-roasted and traditionally stone-ground to bring out its character, the Gokou matcha is delicate, bright and creamy, with a natural milk-like sweetness and a nuanced, refined umami. Its vibrant colour is a reflection of the care and reverence that is taken to grow this rare tea.

A considered cup for mindful moments, best prepared and enjoyed simply as usucha to let its subtle, natural sweetness shine through. Made from first-harvest (ichibancha) leaves.

*Please note: Caffeine found in matcha is a gentler source of caffeine than coffee due to the presence of the L-theanine, however, moderation is advised.

Preparation

1. Scoop 2g (about 1 tsp) of Gokou matcha powder into your vessel or matcha bowl, known as a chawan, using a chashaku or a standard teaspoon (this equates to around 2 heaped scoopings of the chashaku). Sift your matcha using a sieve.

2. Soak your whisk briefly in hot water to soften the tines (the bristles).

3. Add about a tablespoon of the hot water (~80°C) to the matcha and whisk to form a paste. 

4. Pour in the remainder of the hot water (70-100ml) and with a gentle yet swift wrist movement, whisk in a “W” or zig-zag motion until you have a thick, foamy matcha. 

5. Sip and enjoy as is, right out of the matcha bowl. Best enjoyed simply as usucha.

Storage

Once opened, keep sealed in an airtight container such as the canister and store in a cool, dry place away from strong odours, moisture and sunlight.
